We only use healthy oils, responsibly sourced proteins, organic produce, and local whenever possible.

Main ~ Mushroom, cashew ricotta ravioli, white wine sauce

Side ~ Collard greens, garlic, chili, balsamic reduction

Main ~ Spinach and chicken black bean enchiladas, cashew crema

Side ~ Southwest corn chowder

Main ~ Oyster mushroom, turnip, farro stew with sundried tomato chickpea bread

Side ~ Arugula, shaved fennel, blood orange, spiced walnuts, citrus vinaigrette

MEET CHEF KATE

ABOUT

I grew up in the garden state near small family farms with roadside stands that were overflowing with berries, tomatoes, and corn in the summer months; at a young age I understood the bliss of eating a sun-warmed, perfectly ripe strawberry.

 

Inspired by local restaurants that showcased abundant produce, and by my mom hosting extended family for large holiday gatherings, I decided to hone my culinary skills with a degree from Johnson and Wales University to make food my career. I use local produce and ethically sourced meat for my clients because honoring the connection to the food we eat makes it taste better.

 

I moved to Colorado in 2003 and have been in the food service industry ever since. Working at Nederland’s Crosscut Pizzeria ignited my passion for dough and I'm excited to bring that passion to Gudchef Squared.

MEET CHEF JARED

I've been inspired by food my entire life.  Everything wonderful about life is fueled from food; staying healthy, having the energy to enjoy each day, traveling, friends coming together, and sharing family memories.

 

After I received my formal culinary training at Johnson & Wales University, I began exploring the combination of my favorite dishes with a plant-based diet.  I discovered that I could innovate most anything to be plant-inspired!

I believe that all our favorite foods and experiences can be just as wonderful, or more, on a plant focused diet.  With the right mix of nutrients it can enrich your life and your body.
